120g caster sugar
120g self-raising flour
2.0 Tbsp coffee from freshly ground coffee beans
A couple of coffee beans for garnish
200g icing sugar
2 Tsp espresso mixed to a paste.
50g plain chocolate melted.
*Set the temperature, of the oven to 170 degrees C.
*Have 18 fairy cases set in the muffin trays. You will probably need two trays.
*Beat the butter, and sugar together. It should become creamy, then add the eggs and flour gradually. Add the coffee powder and spoon into the cases.
*Bake this for about 20 minutes.
*Cool on a wire rack.
*For the icing, get the butter to the stage where it is light and fluffy and then gradually add the icing sugar. Add the espresso and next the melted chocolate.
*Wait for the cakes to cool and then spread the icing on top with a couple of coffee beans for the final touch.

This is definitely something unique, but apart from being absolutely delicious, it is also a dream to make. Your dinner guests will be amazed at what has come out of the kitchen when you bring this to the table.
*28 chocolate wafer cookies
*3 Tbsp melted butter
*2 quart's coffee ice cream, a little softened
*1/3 cup chocolate covered coffee beans.
*2 cups whipping cream
*1 teaspoon vanilla essence or extract.
*sugar - 1 cup caster
*1/2 cup cocoa powder
*Blend wafers until they are ground.
*Add the melted butter and blend together until well combined.
*Press the mixture into a spring form pans and places in the freezer for about 10 minutes.
*Put ice-cream in a bowl and place the coffee beans in a processor mixing until the beans are chopped up and the ice-cream is softened.
*Mix the beans with the ice-cream and spoon into the crust, which has been in the freezer.
*Cover with plastic wrap and freeze overnight.
*In the morning mix, the cream and vanilla extract together with the sugar, beat up until you see soft peaks starting to form.
*Spread the mixture over the top of the cake.
*Freeze this for about one hour until the cream has set.
*Sprinkle chocolate shavings on top and gently loosen the sides of the pan, releasing the cake. Run a knife around the cake, loosening it all the way around.
*Let it stand for 10 minutes before you serve up.
