A cup of espresso goes down really well with coffee cake. Of course, this is not the only time you can have this. There are many ways you can make a cake like this to bring out that flavor that just about everyone loves so much. Making sure you use the right quality type of ingredients will ensure that you get the balance right. Some quick and easy coffee cake recipes can be found in countless places, but the simple rule, here is to remember you stick to real coffee beans because this ensures you bring out the flavor, whilst reducing the work load.

Cupcakes are so popular, and these are perfect for an afternoon get together or even as a treat after your dinner. These couldn't be easier to make so you should really give it a go.


120g caster sugar

120g butter

120g self-raising flour

4 eggs

2.0 Tbsp coffee from freshly ground coffee beans

A couple of coffee beans for garnish


200g icing sugar

2 Tsp espresso mixed to a paste.

50g plain chocolate melted.

200g butter


*Set the temperature, of the oven to 170 degrees C.

*Have 18 fairy cases set in the muffin trays. You will probably need two trays.

*Beat the butter, and sugar together. It should become creamy, then add the eggs and flour gradually. Add the coffee powder and spoon into the cases.

*Bake this for about 20 minutes.

*Cool on a wire rack.

*For the icing, get the butter to the stage where it is light and fluffy and then gradually add the icing sugar. Add the espresso and next the melted chocolate.

*Wait for the cakes to cool and then spread the icing on top with a couple of coffee beans for the final touch.

This is definitely something unique, but apart from being absolutely delicious, it is also a dream to make. Your dinner guests will be amazed at what has come out of the kitchen when you bring this to the table.


*28 chocolate wafer cookies

*3 Tbsp melted butter

*2 quart's coffee ice cream, a little softened

*1/3 cup chocolate covered coffee beans.

*2 cups whipping cream

*1 teaspoon vanilla essence or extract.

*sugar - 1 cup caster

*1/2 cup cocoa powder


*Blend wafers until they are ground.

*Add the melted butter and blend together until well combined.

*Press the mixture into a spring form pans and places in the freezer for about 10 minutes.

*Put ice-cream in a bowl and place the coffee beans in a processor mixing until the beans are chopped up and the ice-cream is softened.

*Mix the beans with the ice-cream and spoon into the crust, which has been in the freezer.

*Cover with plastic wrap and freeze overnight.

*In the morning mix, the cream and vanilla extract together with the sugar, beat up until you see soft peaks starting to form.

*Spread the mixture over the top of the cake.

*Freeze this for about one hour until the cream has set.

*Sprinkle chocolate shavings on top and gently loosen the sides of the pan, releasing the cake. Run a knife around the cake, loosening it all the way around.

*Let it stand for 10 minutes before you serve up.
